We all, paradoxically, change throughout our lives and also stay the same in some fundamental ways. One way to think about this is to look at different stages of life. Even if we basically have the same personality, we are not the same person we were when we were five. We’ve learned things and grown and had lots of life experiences.
Try thinking about this for your main character. Pick an age that is much younger than they are at the start of your story. How were they the same? How are they different?
Now write a letter from your character at the age they are at the start of your story to their younger self? What wisdom or warnings do they want to impart?
Now condense the time frame. Using as much as you know or guess will happen in your story, write a letter from your character at the end of your story to your character at the beginning of your story. What they want to say to their earlier self will help you see how they change over the course of your story.
